  1. Cut out the seeds of fine large green goose-berries, gathered when they are full grown, but not ripe.
  2. Put them into a pan of water.
  3. Green them.
  4. Put them into a sieve to drain.
  5. Beat them in a marble mortar, with their weight in sugar.
  6. Take a quart of goose-berries, boil them to a mash in a quart of water.
  7. Squeeze them.
  8. To every pint of liquor put a pound of fine loaf sugar.
  9. Boil and skim it.
  10. Put in your green gooseberries (from step 1).
  11. Boil them till they are very thick, clear, and of a pretty green.
  12. Put them into glasses.

CUT and pick out the seeds of fine large green goose-berries, gathered when they are full grown, but not ripe. Put them into a pan of water, green them, and put them into a sieve to drain. Then beat them in a marble mor-tar, with their weight in sugar. Take a quart of goose-berries, boil them to a mash in a quart of water, squeeze them, and to every pint of liquor put a pound of fine loaf sugar. Then boil and skim it, put in your green gooseberries, and having boiled them till they are very thick, clear, and of a pretty green, put them into glasses.
