  1. In broiling these the same rules are to be observed as those given for mutton chops, except with this difference, that they require more doing.
  2. When they are enough, put a little good gravy to them; and in order to give them an agreeable flavour, strew over a little sage shred very fine.
  3. The only sauce is mustard.
