  1. Beat the yolks of four eggs.
  2. Mix the beaten egg yolks with a quart of boiled cream.
  3. When the mixture is cold, let it on the fire and boil until it curds.
  4. Blanch some almonds.
  5. Beat the blanched almonds with orange flower water.
  6. Put the beaten almonds into the cream mixture.
  7. Add a few Naples biscuits and green citron shredded fine to the mixture.
  8. Sweeten the mixture to your taste.
  9. Bake them in cups.

Citron Cheesecakes. BEAT the yolks of four eggs, and mix them with a quart of boiled cream. When it is cold, let it on the fire, and let it boil till it curds. Blanch some almonds, beat them with orange flower water, and put them into cream, with a few Naples biscuits, and green citron shred fine. Sweeten it to your taste, and bake them in cups.
