Green Melon in Flummery.
TAKE a little stiff flummery, and put into it some bitter-almonds, with as much juice of spinach as will make it of a fine pale green. When it becomes as thick as good cream, wet your melon-mould, and put it in. Then put a pint of clear calf's-feet jelly into a large bason, and let them stand all night. The next day turn out your melon, and lay it in the middle of your bason of jelly. Then fill up your bason with jelly that is beginning to set, and let it stand all night. The next morning turn it out in the same manner as directed for the Fruit in Jelly. See page 231. For ornament, put on the top a garland of flowers.
