  1. Let your peas be shelled as short a time as you can before they are dressed, as otherwise they will lose a great part of their sweetness.
  2. Put them into boiling water, with a little salt and a lump of loaf sugar.
  3. When they begin to dent in the middle, they are enough.
  4. Put them into a sieve, drain the water clear from them, and pour them into your dish.
  5. Put in them a good lump of butter, and stir them about with a spoon till it is thoroughly melted.
  6. Mix with them likewise a little pepper.
