  1. Steep the salt-fish in water all night, with a glass of vinegar thrown into it, which will take out the salt, and make it eat as mild as fresh fish.
  2. The next day boil it, and when it is enough, separate it in flakes into your dish.
  3. Then pour egg sauce over it; or parsnips boiled and beat fine with butter and cream.
  4. As it will soon grow cold send it to table on a water-plate.
