  1. Shell the peas.
  2. Put the shelled peas into boiling water with some salt in it.
  3. When they have boiled five or six minutes, throw them into a cullender to drain.
  4. Lay a cloth four or five times double on a table, and spread the peas on it.
  5. Dry the peas well.
  6. Having your bottles ready, fill them with the dried peas.
  7. Cover the peas with mutton-fat fried.
  8. Cork the bottles as close as possible.
  9. Tie a bladder over the corked bottles.
  10. Set the bottles in a cool place.

To keep green Peas till Christmas. PEAS for this purpose must be chosen very fine, young, and fresh gathered. Shell them, and put them into boiling water with some salt in it. When they have boiled five or six minutes, throw them into a cullender to drain. Then lay a cloth four or five times double on a table, and spread them on it.
