  1. Pick over the peas, and if they are dried, soak them all night.
  2. If they are fresh, put them into a stew-pan with a quart of water, and boil them till tender.
  3. Wash the lettuce, cut it in halves, and boil it in the water with the peas.
  4. When the peas and lettuce are tender, drain them from the water.
  5. Put them into a stew-pan with a bit of butter, a little mint, salt, and pepper.
  6. Stir them well, and serve them up hot.
