WHEN you have well scaled your fish, cut off the
head, split it down the back, and take out the bone.
Then strew over the inside some bay-salt and pepper, roll
it up, and lay it in your pot. Cover it close, and let it
bake an hour. Then take it out, and lay it on a coarse
cloth to drain. When it is cold, put it into your pot,
and cover it with clarified butter.
