  1. When you have well scaled your fish, cut off the head, split it down the back, and take out the bone.
  2. Then strew over the inside some bay-salt and pepper, roll it up, and lay it in your pot.
  3. Cover it close, and let it bake an hour.
  4. Then take it out, and lay it on a coarse cloth to drain.
  5. When it is cold, put it into your pot, and cover it with clarified butter.
