  1. Wash and three parts cook the parsnips.
  2. Peel and shred them as in the previous recipe.
  3. Put them on in boiling water, with salt and the juice of a lemon, and finish cooking them.
  4. Strain off the water.
  5. Mix in a pat of warm butter and a good spoonful of minced parsley.
  6. Toss it all lightly together over the fire.
  7. Add a squeeze of lemon juice and use.
