  1. Peel, split, and seed the cucumber.
  2. Cut the pieces into neat even shapes.
  3. Lay them, seasoned with salt and pepper, in a clean cloth for ten minutes to absorb the moisture.
  4. Dip them in flour, then in egg, then in breadcrumbs.
  5. Fry them in plenty of boiling fat till of a golden brown.
  6. Drain them.
  7. Serve very hot.
