  1. Put twelve greengages and other plums into a stewpan with a quarter of a pound of sugar, the juice of a lemon and a little drop of water.
  2. Set them over the fire, shaking the stewpan round occasionally until the fruit is tender, but not mashed.
  3. When cold, dress them in pyramid, and pour the syrup over.
