  1. Cut a nice rabbit into joints, splitting the head in halves.
  2. Lay the rabbit pieces in lukewarm water half an hour, to disgorge.
  3. Dry the rabbit pieces upon a cloth.
  4. Season well with pepper, salt, chopped eschalots, parsley, two bay-leaves, and a spoonful of flour.
  5. Cut three quarters of a pound of uncooked streaked bacon into square pieces the size of walnuts.
  6. Build up the pieces of rabbit and bacon together in a pie-dish, commencing with the worst pieces, and forming a dome.
  7. Pour in a little water.
  8. Cover with paste.
  9. Bake as directed for rumpsteak pie.
