  1. Cut the apples in four and peel them.
  2. Put the apples into a pint of boiling syrup.
  3. Add the peel of half a lemon and the juice of a whole one.
  4. Simmer until the apples are tender.
  5. Remove the apples to a basin.
  6. Boil the syrup until it reaches the stage of a white jelly.
  7. Let the syrup stand until cold.
  8. Place the apples in the vol-au-vent.
  9. Pour the cold syrup or jelly over the apples.
  10. Serve with a few ornaments made with very green angelica.

700. Ditto, with Apples.—This fruit being procurable all the year renders it one of very great convenience; Ripstone pippins are the best: cut in four, peel them, put a pint of syrup, when boiling, put in your apples, with the peel of half a lemon, and the juice of a whole one, let simmer till tender, put it in a basin, boil the syrup to a white jelly, let it stand till cold, put the apple in the vol-au-vent, and pour the syrup (cold) or jelly over; serve a few ornaments made with very green angelica.
