  1. Choose a young full grown rabbit.
  2. Hang it, with the skin on, two or three days.
  3. Skin the rabbit.
  4. Lay the rabbit unwashed in a seasoning of black and Jamaica peppers, in fine powder.
  5. Put some port wine into the dish.
  6. Baste the rabbit occasionally with the seasoning and port wine for forty hours.
  7. Stuff and roast it as hare.
  8. Serve with the same sauce as hare.
  9. Do not wash off the liquor that it lay in before serving.

To make Rabbit taste much like Hare.
