  1. Chop fat and lean of pork.
  2. Season with sage, pepper, and salt.
  3. Add two or three pimentos.
  4. Half fill hog’s guts, that have been soaked and made extremely clean.
  5. Alternatively, the meat may be kept in a very small pan, closely covered.
  6. Roll the meat and dust with a very little flour before frying.
