  1. Cut oranges in halves, squeeze the juice through a sieve.
  2. Soak the peel in water.
  3. The next day, boil the peel in the same water till tender.
  4. Drain the peel and slice it.
  5. Put the sliced peel to the juice.
  6. Weigh as much sugar as the juice and peel combined, and put all together into a broad earthen dish.
  7. Put the dish over the fire at a moderate distance, often stirring till the chips candy.
  8. Set them in a cool room to dry.
  9. They will not be dry under three weeks.

Orange Chips. Cut oranges in halves, squeeze the juice through a sieve; soak the peel in water, next day boil in the same till tender, drain them, and slice the peels, put them to the juice, weigh as much sugar, and put all together into a broad earthen dish, and put over the fire at a moderate distance, often stirring till the chips candy; then set them in a cool room to dry. They will not be so under three weeks.
