  1. Cream together butter and caster sugar.
  2. Add in, one by one, ten to twelve eggs, beating in each well before adding the next.
  3. Stir in halved and dried cherries, finely shred citron peel, and a few drops of essence of lemon.
  4. Dissolve powdered ammonia in milk.
  5. Add the dissolved ammonia mixture and dried and sifted flour to the previous mixture.
  6. Pour it all quickly into buttered moulds and bake.

Cherry. —Cream together 1lb. butter and 1lb. caster sugar, then add in, one by one, ten to twelve eggs, beating in each well before adding the next. Then stir in 1lb. of halved and dried cherries, and 4oz. of finely shred citron peel, with a few drops of essence of lemon. Dissolve ⅘oz. powdered ammonia in half a gill of milk, and add it with 1lb. of dried and sifted flour to the previous mixture, pour it all quickly into buttered moulds and bake.
