  1. Wash a quarter of a pound of macaroni broken into short pieces.
  2. Put it into a large saucepan of cold water, with a teaspoonful of salt.
  3. Boil it for about three quarters of an hour, or until it is soft.
  4. Then strain off the water.
  5. Melt one ounce and a half of butter in a small saucepan.
  6. Stir in one ounce of flour.
  7. Then add by degrees half pint of milk, pepper and salt, and stir it over the fire till it boils and thickens.
  8. Then add one ounce of strongly flavoured grated cheese.
  9. Stir in the macaroni.
  10. Then spread it out on a flat dish and sprinkle over it another ounce of cheese, and brown the top in a quick oven or before the fire.

Macaroni with Cheese.—Wash a quarter of a pound of macaroni broken into short pieces. Put it into a Large saucepan of cold water, with a teaspoonful of salt.
