  1. Boil the cow-heel in three pints of water for six hours.
  2. When cold, remove all the fat.
  3. Put the jelly in a stewpan with the juice of two lemons and the rind of one, two ounces of sugar and the white and shell of one egg slightly beaten.
  4. Add a little spice if desired.
  5. Add saffron for colour.
  6. Let it boil up, stirring all the time.
  7. Place it on one side for twenty minutes.
  8. Strain it through a cloth until clear.

Cow-heel Jelly.—Take a cow-heel ready dressed (i.e. from the tripe shop), and boil it in three pints of water six hours. When cold, remove all the fat, put the jelly in a stewpan with the juice of two lemons and the rind of one, two ounces of sugar and the white and shell of one egg slightly beaten, and a little spice if the invalid likes it. A little saffron, five or six threads, gives it a nice colour. Let it Boil up, stirring all the time, place it on one side twenty minutes, then strain it through a cloth till clear. The foot itself is good either hot with onion sance, or cold.
