Steak.—A steak or a fillet from the leg of mutton should be peppered on both sides, and broiled for five minutes on each side. A warm plate should be ready for it, on which has been mixed half an ounce of butter, one teaspoonful of chopped parsley, a little salt. This is called maître d'hôtel butter.
