  1. Wash Irish moss, and let it soak all night.
  2. Dry it and boil it, one ounce in a quart of water till reduced to one half.
  3. Strain through a sieve.
  4. Take the jelly with milk, or wine, flavoured to taste.
  5. The moss can be boiled in milk and put in a shape.
