  1. Soak cod's sounds in milk and water for at least six hours.
  2. Wash the sounds and put them to boil in a stewpan containing fresh milk and water.
  3. Gently boil until done, about an hour.
  4. Drain the sounds on a napkin.
  5. Cut the sounds into pieces about an inch and a half square.
  6. Put the cut sounds into a stewpan with a sufficient quantity of egg sauce (No. 34).
  7. Toss the whole together over the fire.
  8. Pile the sounds up on a dish in a pyramidal form.
  9. Garnish them around with neatly-cut boiled parsnips.
  10. Send to table.

COD'S SOUNDS, AND EGG SAUCE. PREPARATORY to boiling cod's sounds, it is quite necessary that they should be soaked in milk and water for at least six hours, and then washed and put to boil in a stewpan containing fresh milk and water; then continue gently boiling till they are done—about an hour will suffice to do this. When done, drain them on a napkin, cut them into pieces about an inch and a half square, and put them into a stewpan with a sufficient quantity of egg sauce (No. 34); toss the whole together over the fire, pile them up on a dish in a pyramidal form, garnish them round with neatly-cut boiled parsnips, and send to table.
