  1. Prepare two dozen puff-paste tartlets as directed above.
  2. Fill each tartlet with a spoonful of apricot or greengage-jam.
  3. Wet round the edges of the tartlets.
  4. Place a mosaic of paste on the top of each tartlet.
  5. Egg these over slightly.
  6. Bake them of a light colour.
  7. When they are done, shake some fine sugar over them.
  8. Glaze them with the red-hot salamander.

1326. MOSAIC TARTLETS. Prepare two dozen puff-paste tartlets as directed above, and fill each of them with a spoonful of apricot or greengage-jam; wet round the edges, and place a mosaic of paste on the top of each, egg these over slightly, and bake them of a light colour; when they are done, shake some fine sugar over them, and glaze them with the red-hot salamander.
