  1. Steam 4oz. of herring or mackerel roes.
  2. When cold, pound the roes with 4oz. minced shrimps, 1oz. butter, 1oz. grated Parmesan, and a seasoning of black pepper, cayenne, salt, and lemon juice.
  3. Gradually work into the mixture a tablespoonful of cream, a few drops of chilli or tarragon vinegar, and a little thick white sauce.
  4. Have freshly toasted but cold toast, split.
  5. Spread the inner sides of the toast with the mixture.
  6. Press very lightly together and serve.
  7. If served on biscuit-crisp fried bread or anchovy or cheese biscuits this makes a very nice savoury.

If served on biscuit-crisp fried bread or anchovy or cheese biscuits this makes a very nice savoury.
