  1. Weigh equal quantities of sugar and of fruit.
  2. Put the fruit into a preserving-pan.
  3. Boil it very quickly.
  4. Break it.
  5. Stir it constantly.
  6. When the juice is almost wasted, add the sugar.
  7. Simmer it half an hour.
  8. Use a silver spoon.
