  1. Pluck the woodcocks or snipes, but do not draw them.
  2. Put them on a small spit.
  3. Dust and baste them well with butter.
  4. Toast a few slices of a penny loaf.
  5. Put the toasted slices on a clean plate.
  6. Set the plate under the birds while they are roasting.
  7. If the fire be good they will take about ten minutes roasting.
  8. When you draw them lay them upon the toasts on the dish.
  9. Pour melted butter round them.
  10. Serve them up.

To roast WOODCOCKS or SNIPES. PLUCK them, but do not draw them, put them on a small spit, dust and baste them well with butter, toast a few slices of a penny loaf, put them on a clean plate, and set it under the birds while they are roasting, if the fire be good they will take about ten minutes roasting; when you draw them lay them upon the toasts on the dish, pour melted butter round them, and serve them up.
