White Puddings in Skins. WASH half pound of rice in warm water, boil it in milk till it is soft, put it in a sieve to drain, blanch and beat half a pound of Jordan almonds very fine, with rose water, wash and dry a pound of currants, then cut in small bits a pound of hog's lard, take six eggs and beat them well, half a pound of sugar, a large nutmeg grated, a stick of cinnamon, a little mace, and a little salt, mix them very well together, fill your skins, and boil them.
