  1. Boil a quart of cream.
  2. Beat the yolks of four eggs.
  3. Mix the beaten egg yolks with your cream when it is cold.
  4. Set the mixture on the fire and let it boil until it curds.
  5. Blanch some almonds.
  6. Beat the blanched almonds with orange-flower water.
  7. Put the almond mixture into the curdled cream.
  8. Add a few Naples biscuits and green citron shredded fine.
  9. Sweeten the mixture to your taste.
  10. Bake the mixture in tea-cups.

BOIL a quart of cream, beat the yolks of four eggs, mix them with your cream when it is cold, then set it on the fire, let it boil till it curds, blanch some almonds, beat them with orange-flower water, put them into the cream, with a few Naples biscuits, and green citron shred fine, sweeten it to your taste, and bake them in tea-cups.
