  1. Pare and stone the largest Newington peaches.
  2. Have ready a saucepan of boiling water.
  3. Put in the peaches, let them boil till they are tender.
  4. Lay them on a sieve to drain.
  5. Then weigh them, and put them in the pan they were boiled in.
  6. Cover them with their weight of sugar.
  7. Let them lie two or three hours.
  8. Then boil them till they are clear, and the syrup pretty thick.
  9. Let them stand all night covered close.
  10. Scald them very well.
  11. Then take them off to cool.
  12. Then set them on again till the peaches are thoroughly hot.
  13. Do this for three days.
  14. Lay them on plates to dry, and turn them every day.

To dry PEACHES. PARE and stone the largest Newington peaches, have ready a saucepan of boiling water, put in the peaches, let them boil till they are tender, lay them on a sieve to drain, then weigh them, and put them in the pan they were boiled in, and cover them with their weight of sugar, let them lie two or three hours, then boil them till they are clear, and the syrup pretty thick, let them stand all night covered close, scald them very well, then take them off to cool, then set them on again till the peaches are tho roughly hot, do this for three days, lay them on plates to dry, and turn them every day.
