PLUCK the artichokes from the stalks just before they come to their full growth (it will draw out all the strings from the bottom) and boil them so that you can just pull off the leaves, lay them on tins, and set them in a cool oven, and repeat it till they are dry, which you may know by holding them up against the light, and if you can see through them they are dry enough;
