  1. Pare your apricots, and thrust out the stones with a skewer.
  2. To every pound of apricots put a pound of loaf sugar, strew part of it over them, and let them stand till the next day.
  3. Give them a gentle boil three or four different times, let them go cold betwixt every time.
  4. Take them out of the syrup one by one.
  5. The last time as you boil them, skim your syrup well, boil it till it looks thick and clear, then pour it over your apricots, and put brandy papers over them.

To preserve APRICOTS.
