  1. Blanch two ounces of sweet almonds.
  2. Beat the blanched almonds fine with orange-flower water.
  3. Beat the whites of three eggs to a very high froth.
  4. Strew in a little sifted sugar.
  5. Mix your almonds with your sugar and eggs.
  6. Add more sugar, till it is as stiff as a paste.
  7. Lay it in cakes.
  8. Bake it on paper in a cool oven.

To make ALMOND PUFFS. BLANCH two ounces of sweet almonds, beat them fine with orange-flower water, beat the whites of three eggs to a very high froth, then strew in a little sifted sugar, mix your almonds with your sugar and eggs, then add more sugar, till it is as stiff as a paste, lay it in cakes, and bake it on paper in a cool oven.
