BLANCH two ounces of sweet almonds, beat them fine with orange-flower water, beat the whites of three eggs to a very high froth, then strew in a little sifted sugar, mix your almonds with your sugar and eggs, then add more sugar, till it is as stiff as a paste, lay it in cakes, and bake it on paper in a cool oven.
