  1. Peel off all the skin, and pull the flesh off the bones in as large pieces as you can.
  2. Dredge the fish with a little flour.
  3. Fry it a nice brown in butter.
  4. Toss it up in rich gravy, well seasoned.
  5. Thicken the gravy with a piece of butter rolled in flour.
  6. Just before you send it up, squeeze in the juice of a lemon.
