  1. Put your butter into a clean saucepan.
  2. Set the saucepan over a slow fire.
  3. When the butter is melted, scum it and take it off the fire.
  4. Let it stand a little.
  5. Pour the clarified butter over your lobsters.
  6. Take care not to pour in the milk which settles to the bottom of the saucepan.
