  1. Put a little white bread in a pint of good milk.
  2. Set it over the fire.
  3. Warm a little more than a pint of good strong ale, with nutmeg and sugar to your taste.
  4. Put the warmed ale in a bowl.
  5. When your milk boils, pour it upon your ale.
  6. Let it stand a few minutes to clear, and the curd will rise to the top.
  7. Serve it up.

To make an Ale Posset. PUT a little white bread in a pint of good milk, set it over the fire, then warm a little more than a pint of good strong ale, with nutmeg and sugar to your taste, then put it in a bowl, when your milk boils pour it upon your ale, let it stand a few minutes to clear, and the curd will rise to the top; then serve it up.
