  1. Take some pistachio, strawberry, and Kirsch custards (‘ Book of Ices,’ pages 19, 22, and 16), freeze them separately in the charged freezer, and put some of each of the different colours into small assorted ice moulds, filling them well;
  2. put the moulds on the bottom of the charged ice cave for two hours;
  3. then turn out the ices on to a clean, dry cloth, and use as instructed above.
