  1. Surround a soufflé case with a band of kitchen paper, so that it stands about four to five inches above the top of the case
  2. place a bottle in the centre of the case and pour round it the soufflé mixture, prepared as below
  3. Place the case in the charged ice cave for three and a half hours, during which time turn it occasionally from side to side, so that the soufflé becomes evenly frozen
  4. when the soufflé is firm remove the bottle by passing a hot wet knife round it
