Line a plain border mould thinly with lemon jelly (see
recipe), garnish it all round with little star shapes of
the same jelly coloured red with Marshall's Carmine, set this
with a little more jelly, and when it is firm fill up the
centre with a rice cream ice prepared as below, and place
the shape in the charged ice cave for about two hours;
when sufficiently frozen turn out the border in the usual
way on to a dish; arrange on it as shown in engraving little
