  1. Steep 1/2 oz. of the moss in cold water for a few minutes, then take it out, taking care to shake the water out of each sprig.
  2. Boil in 1 qt. of new or unskimmed milk until it attains the consistency of warm jelly.
  3. Strain it.
  4. Sweeten to taste with sugar, honey, or candied Eringo root.
  5. Water may be used instead of milk if the latter disagrees with the invalid.
  6. Flavour with lemon juice, cinnamon, or bitter almonds at pleasure.

Carragheen or Irish Pearl Moss. Steep ½ oz. of the moss in cold water for a few minutes, then take it out, taking care to shake the water out of each sprig, and boil in 1 qt. of new or unskimmed milk untill it attains the consistency of warm jelly.
