  1. Mix the sugar in gradually with a whisk till all is light and creamy.
  2. Put a paper on the baking sheet with a little powdering of sugar on it.
  3. Slip the meringue on to this and powder in top with sugar.
  4. Bake in a slowish oven till a good coffee colour.
  5. Then put it on the fruit and place it in the meat screen a 1/2 hour to keep warm and to fix it to the stewed fruit to cover it completely.

Meringue Mixture to cover Fruit in Glass Dish. (Mrs. Brinkler.) 3 whites of egg stiffly whisked, ½ lb. castor sugar put through a fine hair sieve. Mix the sugar in gradually with a whisk till all is light and creamy, then put a paper on the baking sheet with a little powdering of sugar on it; slip the meringue on to this and powder in top with sugar; bake in a slowish oven till a good coffee colour. Then put it on the fruit and place it in the meat screen a ½ hour to keep warm and to fix it to the stewed fruit to cover it completely.
