“Nudels.” No. 1. (Miss “Paula” Schuster. 1885.)
Stir up 1d. worth of German yeast in a teacupful of milk, and then pour it into the middle of 1 lb. of four; stir it all up, and put to rise (as sponge) in a warm place out of all draughts, just as if it were for rolls; after that you mix it to a smooth mass with ½ pt. milk, 1 lb. butter, 1 egg, and a little sugar, mixing all well together. These all must rise again (as dough).
