  1. Put 1 tablespoonful of pearl barley into a decanter of cold spring water, and shake well.
  2. Change the water every few minutes for 20 times.
  3. Pour it off, and put the pearl barley into a quart jug.
  4. Add thin lemon peel and loaf sugar.
  5. Fill the jug with boiling water.
  6. Cover the jug.
  7. Let it stand till cold.

Barley Water. No. 3. Without lemon-juice. 1 tablespoonful of pearl barley put into a decanter of cold spring water, and shaken well. Change the water every few minutes for 20 times (? minutes). Pour it off, and put the pearl barley into a quart jug, add thin lemon peel and loaf sugar, and fill the jug with boiling water. Cover the jug. Let it stand till cold.
