  1. Whip the cream.
  2. Dissolve the gelatine in a very little boiling water.
  3. Strain it gradually over the cream, whisking it continually while doing so.
  4. Stir in the grated pine-apple and the sugar.
  5. Beat in a cold place until the mixture begins to set.
  6. Then arrange the meringues and cream in layers.
  7. Garnish with crystallised fruits.

*Pine Apple Meringue ¹⁄₂ pint cream 1 cup grated pine-apple 4 table-spoons sugar ¹⁄₂ oz. gelatine 7 meringue cases Whip the cream. Dissolve the gelatine in a very little boiling water.
