  1. Prepare, cut, cook, and drain the Nouilles as above.
  2. Mix the Nouilles with the grated Parmesan cheese, cayenne, and hot cream.
  3. Boil up together.
  4. Turn out onto a hot dish.
  5. Brown the top with a salamander.
  6. Serve very hot.

Nouilles with Parmesan. (Nouilles au Parmesan.) Prepare, cut, cook, and drain the Nouilles as above, and mix them with a quarter of a pound of grated Parmesan cheese, a tiny dust of cayenne and two tablespoonfuls of hot cream; boil up together, turn out on to a hot dish, brown the top with a salamander, and serve very hot.
