  1. Boil the spinach very green in plenty of water.
  2. Drain the spinach.
  3. Press the moisture from it between two trenchers.
  4. Chop it small.
  5. Put it into a clean saucepan.
  6. Add a slice of fresh butter.
  7. Stir the whole until well mixed and very hot.
  8. Smooth it in a dish.
  9. Mark it in dice.
  10. Send it quickly to table.

SPINACH. (Common English mode.) Boil the spinach very green in plenty of water, drain, and then press the moisture from it between two trenchers; chop it small, put it into a clean saucepan, with a slice of fresh butter, and stir the whole until well mixed and very hot. Smooth it in a dish, mark it in dice, and send it quickly to table.
