  1. Singe a goose, and pour over it a quart of boiling milk.
  2. Let it continue in the milk all night, then take it out, and dry it well with a cloth.
  3. Cut an onion very small with some sage, put them into the goose, sew it up at the neck and vent, and hang it up by the legs till the next day;
  4. then put it into a pot of cold water, cover it close, and let it boil gently for an hour.
  5. Serve it up with onion sauce.
