  1. Pluck and draw the partridge.
  2. Wash it well, and put it into a saucepan with plenty of cold water.
  3. Bring it to the boil, and skim it well.
  4. Add a teaspoonful of salt, and let it boil gently for about an hour, or until it is tender.
  5. Serve hot with any sauce you like.
