  2. If the cheese is old, with a rough and ragged coat, or dirt at top, you may expect to find little worms or mites in it.
  3. If it is moist, spungy, or full of holes, there will be reason to suspect it is maggoty.
  4. Whenever you perceive any perished places on the outside, be sure to probe the bottom of them; for, though the hole in the coat may be but small, the perished part within may be considerable.
