  1. Boil a quarter of an ounce of fine hyson tea with half a pint of milk.
  2. Strain it.
  3. Put in half a pint of cream, and two spoonsful of rennet.
  4. Set it over some hot embers in the dish you intend to send to table, and cover it with a tin plate.
  5. When it is thick it will be done, and fit to serve up.
